“Traffic Light” eggplant appetizer
An interesting and bright appetizer.
You can use yellow bell peppers instead of corn.
From the specified amount of ingredients, 4-6 servings are obtained.
- 500 g eggplant
- 300 g tomatoes
- 3-4 tbsp corn
- 150 g onions
- vegetable oil
Finely chop the onion.
Cut the eggplants into small cubes.
Dice the tomatoes.
Finely chop the greens.
Fry the onions in vegetable oil.
Fry until tender (about 15 minutes).
Put eggplants on a flat dish.
Make 3 round indentations in it..
Put tomatoes, corn, greens in them.
Mix everything on the table.
Enjoy your meal!
